Basil Pesto Chicken Pizza

Who doesn’t love pizza? Papa Johns may have some hella deals, but when eating right, the convenience of delivery unfortunately isn’t an option. I had some leftover rotisserie chicken and decided to use it for a pizza.

I love pesto and the flavor of basil along with tomatoes. So, I chose to use both a tomato sauce and pesto sauce together for this pizza. It is super easy and turned out great! This would make a great option to use with a cauliflower or zucchini crust. But, this time I went old school and convenient with regular ol’ dough.

What you need:

-Cooked pulled chicken
-Tomato sauce of choice
-Pesto sauce
-Fresh basil
-Pizza crust (I used Pillsbury thin crust)
-Mozzarella cheese

What to do:

  1. Roll your dough out onto a greased baking sheet.

  2. Spread tomato sauce over dough.
  3. Repeat with pesto sauce.

  4. Add chicken and strips of basil leaves.

  5. Top with mozzarella cheese.

  6. Bake according to pizza crust instructions.

While this was wonderful on its own, next time I’d like to add sun-dried tomatoes and pine nuts. I have enough leftovers for lunch this week, and I can’t wait to eat it all over again!
